One of the many tasks of the USDA is to keep tabs on produce supplies. On February 15th, 2013 they posted the most recent numbers regarding the Idaho potato supply. Now what most potato eaters don’t realize is that Idaho’s potato crop is harvested in the fall of every year and then put into climate controlled storages to hold them so we have a continuous supply.
Well, as of February 1st, 2013 the USDA has reported that there was a little over 8 billion pounds of Idaho potatoes stored up to keep our bellies full till the 2013 fall crop can be harvested!! Wow.
